Legendary Restaurant Brands – the private company behind Bennigan’s, Bennigan’s On The Fly and Steak & Ale – has expanded the reach of its Bennigan’s On The Fly concept by adapting it to hotel locations.
Bennigan’s On The Fly is the Bennigan’s version for non-traditional venues such as airports and malls. Legendary is going one step forward by adapting the concept to operate as a virtual kitchen in hotels and provide delivery and takeout for the hotel customers as well as the public. The new concept provides a growth opportunity for hotels which have been seriously struggling during the pandemic and allow them to maxime the kitchen use for take out and delivery sales. In the words of Bennigan’s CEO – Paul Mangiamele – “You [the hotels] have got this humongous kitchen and you’re not utilizing it all”.. “I think that’s erroneous. Everything should be looked at as profit center”. The new concept is already in place in two hotels in Iowa (US) through a licensing agreement with Kinseth Hospitality Companies.
